Birthday Dinner...Cheesy Artichoke Bread Recipe

Here are a couple pictures of my birthday dinner. Below is the seafood linguine...minus the linguine. The picture might not look so appetizing to some but it was seriously the BEST pasta I have ever made and I think I totally out did any restaurant that I have ever tried! Go me!! I was happy because more often than not I do not love my own cooking.


I was told the bread didn't look so appealing but that it is very tasty. Um...thanks? ;) I thought it looked good and tasted great! I don't know about the picture though. Anyhow...if you want to try here is how I made it:

Preheat oven to 350
Cut a loaf of french bread in half and place on a baking sheet

In a separate bowl combine 2 cups mayo
1 can/jar of artichoke hearts(cut these up into smaller pieces first)
1 clove of very finely minced garlic
2 cups fresh shredded Parmesan cheese
4 strips of cooked bacon broken up into bits (you can use bacon bits but I doubt it tastes near as good??)

Stir it all together until ingredients are evenly distributed

Spread over french bread

Josh said it lacked color so he wanted me to sprinkle yellow cheese on top (I don't think I did but you can!)

Then bake for 15-20 minutes...just keep on eye on it and take out once it is melty, bubbly, and starting to brown.

If you like artichokes this is awesome!! I want to think of a substitute to the mayo but I haven't tried anything yet. It is hearty enough to even be a meal...like pizza...add some chicken and you will have Chicken Artichoke French Bread Pizza....yum! (totally not low fat...that is why it tastes so good)

Let me know if anyone tries this and likes it. I hope I wrote the recipe right. Anyhow there are a bunch of recipes online that are basically the same.

Here is the birthday card that folds out into a banner and is still hanging above my bedroom door. This is the card that Katie and I both got for each other. It is fun...I may leave it up all year long:)

That all looks delicious! I will definitely try the bread. The pasta sauce looks SO good, too.
